Producer Jon Favreau discussed the process of depicting Grogu's background through flashbacks during Disney Gallery / Star Wars: The Mandalorian Season 3,

revealing that they wanted to "continue to tell that story in small chapters." The creators were then forced to ask, "What's the next chapter?"

The Mandalorian season 3 showed who saved Grogu from Order 66, but it's unclear how Grogu got from there to where he was in The Mandalorian season 1. As a result,
