Sandwiches with Grilled Cheese on a Sheet
Instead of patiently waiting over a hot pan and turning one grilled cheese sandwich after another, create five toasted and gooey grilled cheese sandwiches all at once on a sheet pan.
With the help of this easy sheet pan method, you can create five grilled cheese sandwiches at the same time, ensuring that everyone at the table receives a sandwich that is equally gooey and warm at the same time. All of this can be accomplished with almost any more work than it takes to prepare a single sandwich.
For these buttery and delicious sheet pan grilled cheese sandwiches, we went with four different kinds of cheese: goat, white cheddar, provolone, and Swiss. However, you are free to change the cheeses up based on what you prefer or what you have in your fridge.We went with goat, white cheddar, provolone, and Swiss.
You could also jazz them up with some additional toppings, such as spinach, basil leaves, and tomato slices, or you could give people the option to build their own sandwiches according to their own preferences. Your grilled cheese, just anyway you want it.

- Ingredients
3 ounces of unsalted butter, divided into 6 tablespoons
2 tablespoons of goat cheese seasoned with herbs
10 pieces of white bread, thickly sliced
5 thin slices of strong white cheddar cheese.
5 provolone cheese slices
5 pieces of Swiss cheese in total
Method
Start by preheating the oven and getting a baking sheet ready:
Put a rack in the top third of the oven and preheat the oven to 425 degrees Fahrenheit. After placing the butter on a baking sheet with a rim and placing it in an oven that has been preheated, wait about five minutes for the butter to melt.
Put together the sandwiches, then bake them:
Goat cheese is spread over 5 of the bread pieces in an equal layer.
To ensure that the melted butter covers the whole bottom of the pan, carefully tilt the pan. Place all of the bread pieces on the baking pan in a single layer and drizzle the melted butter over them.
Check to ensure that the goat cheese is positioned correctly.
Put one piece of cheddar on each bread slice that has goat cheese on it. On each slice of plain bread, put one slice of provolone cheese, one slice of Swiss cheese, and one slice of cheddar cheese.
Bake: Return the dish to the oven and bake it at 425 degrees Fahrenheit for approximately 7 minutes, or until the cheese is bubbling and the bread is starting to brown.
Put the finishing touches on the sandwiches, then put them back in the oven:
Take the sandwiches out of the oven and construct them by layering one slice of goat cheese, one piece of provolone cheese, and one slice of Swiss cheese on each sandwich. Place back in oven and continue baking for an additional 3 to 4 minutes, or until the bread is golden and toasted.

- 1 loaf of bread, sliced
- 1/2 cup of butter, melted
- 1/2 cup of mayonnaise
- 1/2 cup of Dijon mustard
- 1/2 cup of grated Parmesan cheese
- 1/2 cup of chopped fresh herbs (such as parsley, thyme, and rosemary)
- 1/2 cup of sliced green onions
- 1/2 cup of sliced mushrooms
- 1/2 cup of sliced bell peppers
- 1/2 cup of sliced zucchini
- 1/2 cup of sliced eggplant
- 1/2 cup of sliced tomatoes
- 1/2 cup of sliced red onions
- 1/2 cup of sliced olives
- 1/2 cup of crumbled feta cheese
- Salt and pepper to taste

Preheat your oven to 375°F.

In a small bowl, mix together the melted butter, mayonnaise, Dijon mustard, grated Parmesan cheese, and chopped fresh herbs.

Spread the mixture evenly over each slice of bread.

Sprinkle the sliced green onions, mushrooms, bell peppers, zucchini, eggplant, tomatoes, red onions, and olives over the vegetables.

Sprinkle the crumbled feta cheese over the top of the vegetables.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the vegetables are tender.
